White Bean and Chicken Soup
Measurement Ingredient
6 cups Chicken stock
3-4 cups Cooked shredded chicken
2 (15 oz cans) Beans of Choice (i.e.Great Northern Beans)
2 cups (or 16 oz) Salsa verde
2 tsp Ground cumin.
*optional Toppings: Avocado and/or fresh chopped cilantro


Add all ingredients to your crockpot and cook on low setting for 4-6 hours. Once cooked and served, top serving with your preference of toppings, such as avocado or cilantro.



Baked Salmon
Measurement Ingredient
4 servings Salmon fillets (preferably skin off)
4 tsp Olive Oil
Several pinches Salt, pepper, thyme, and rosemary.
2-3 Medium lemons sliced
4 sheets of foil


Preheat oven to 400 degrees farenheit.

1. Lay the salmon fillets out individually one per sheet of foil. Place fillet in the center of foil.

2. Drizzle one teaspoon of olive oil on each salmon fillet. Then season with pinches of seasoning to your liking.

3. Place a few pieces of lemon slices on top of each fillet.

4. Fold the foil and pinch on the ends to create an envelope around the ingredients.

Bake for around 20 minutes. Carefully remove from oven and open to check that fillets are done cooking
